Baking My Way: Pillsbury Cranberry Cookies


These cookies are SO good! I made them with naturally dried cranberries (I didn't chop them up at all) and pecans and wow, so tasty! They are really light too. A great spring cookie!

Ingredients

- 1/2 cup sugar
- 1/2 cup firmly packed brown sugar
- 1/4 cup butter
- 2 tbsp milk
- 1 tsp lemon juice
- 1/2 tsp vanilla
- 1 egg
- 1 1/2 cup flour
- 1/2 tsp baking powder
- 1/2 baking soda
- 1/4 tsp salt
- 1 cup fresh or frozen cranberries, coarsely chopped
- 1/2 cup chopped nuts


Directions
- Heat oven to 375
- Combine sugars and butter; beat until like and fluffy
- Add milk, lemon juice, vanilla and egg; beat well
- Add flour, baking soda and powder and salt; mix well
- Stir in cranberries and nuts
- Drop dough by rounded teaspoons 2 inches apart
- Bake for 8-12 minutes
- Immediately remove cookies from sheet
